When it is freshly roasted, it has a pleasant acidity, heavy body, and an intense aroma. Like all coffees, after it is harvested it is pulped and fermented. But what differentiates Colombian coffees from many other types of coffees is that after the fermentation process, the beans are washed with water to remove damaged beans and any remaining vegetative matter.
